I have a new found love, sushi the raw food way. I use grated parsnip and add a little soy sauce. Spread it over the nori, add avocado, tomato, cucumbers and roll it up and cut it. Delicious! You can also put some pickled ginger on it or some wasabi. The parsnip acts as the rice and it does a great job. Parsnip looks like a white carrot.
