Sushi the raw food way

I have a new found love, sushi the raw food way. I use grated parsnip and add a little soy sauce. Spread it over the nori, add avocado, tomato, cucumbers and roll it up and cut it. Delicious! You can also put some pickled ginger on it or some wasabi. The parsnip acts as the rice and it does a great job. Parsnip looks like a white carrot. You can usually find it at your local health food store. Want pictures? I can upload some soon.
